Those pancakes sound like porridge. I had some success with rice flour, soy milk (1 cup of each) and half a banana totally mushed. I had disaster central when I used coconut flour though. I was thinking it would be good to put the lime on the coconut but it never got that far.
I have drunk coconut water, from a young Thai coconut. It was a challenge to opened it though. You use the oats, to make oat flour supposedly for the pancake. My favourite toothpaste is white glow.
