Hello BBers

Please share an easy recipe you love. If you have a story of where your recipe(s) came from, chat away. Feel free to write your recipe in any format you like! I can't wait to try Mara's specialty Rocky Road..... like yesterday.

Here's mine. A perfect 'day off' meal and absolutely wonderful for Winter. You can prep in the morning and put it together at lunchtime for dinner. I made up the recipe after a few dismal failures lol. I have ideas for any leftover cooked stock mixture later...

Beef brisket - the BB easy peasy way.
You'll need:
1 beef brisket that fits into your baking tray with some room.
1L beef stock. 2L if the brisket is BIG.
Worcestershire sauce.
2 onions sliced anyway you like.
Mushrooms sliced thickly - as many as you like.
Oil - any type.
Salt.
Pepper.
A baking tray... the best tasting one I've made was cooked in a cast iron, enameled baking tray but any will do.
Aluminium foil to cover the baking tray.
A frying pan / skillet.
Utensils for pan and tray.
Oven gloves.
Oven & stove top.

To cook:
Pour cold stock & 2 tblsp W sauce into baking tray.
Saute onions in oil in pan & add to baking tray.
Brown mushies as above & add to baking tray.
Sprinkle salt / pepper over brisket.
Brown both sides of brisket in pan then add to baking tray.
Cover whole tray with foil & scrunch under edges.
Spoon stock mixture over brisket to coat.
NB: The stock mixture needs to come up to around half way on side of brisket. Add more stock if needed.
Slow cook in warm oven c110C for about 2h.
Check.
Turn brisket.
Repeat.
Taste to see if more W sauce is needed.
Rest meat for 15 mins.
Slice and serve.

Note: IF you want a pulled beef effect then you can cook longer until beef is falling apart. Add to sliders, Turkish bread.

Hi SapereAude, awesome! We would love any of your favourite BBQ recipes ANY TIME lol.

Here's one of my favourite BBQ recipes and vegetarian tooboot and also only 3 ingredients lol.

BB BBQ corn on the cob
Ingredients
* Fresh corn on the cob
* Fresh garlic
* Butter

Method
Strip corn of husks and silks. Compost them lol oh that's for the gardening thread.
Boil corn for about 25 mins.
Melt butter then add garlic.
Spark up the barbie and using the grate side put corn on.
Brush garlic butter mixture on sides that are facing the heat.
Continue turning and brushing.
Corn kernels will get a tad burned at edges. This is about when they're ready.
Rest.
EAT!

Hi Em we were talking about Lilly pilly jam and here is my recipe that i used Riberry (Syzygium luehmannii)

2kgs Riberries

2kgs sugar

2 lemons juiced

Place Riberries in saucepan with lemon juice and bring to boil until fruit is soft.

Mash with potato masher.

Add sugar and boil until some sets(about 10 mins)

Put in sterilized jars.

To test if set place on saucer thats been in freezer for 30 seconds and then push with finger and it should wrinkle up.If it is still runny cook a bit longer and repeat.

Dear Matchy, I've never heard of Riberries, what are they?

Sounds delicious lol, anything with berry in it sounds delicious to me 🙂

Hi Em the Riberry is also called small leaf Lilly pilly.Its in the Lilly pilly family.

Easy peasy Chicken and mushroom pie

You will need:
* cooked chicken (I usually use leftovers or you can use leftover BBQ chicken)
* 1 tin of cream of mushroom soup or mushrooms in butter sauce
* 2 sheets of puff pastry
* pie dish or similar
* any extra veg you like - carrots, corn, onion and small florets of broccoli work well.
* spray oil

Method:
* Spray oil on pie dish
* Put 1 sheet of pastry in dish, trim pastry around edges and bake till light golden colour, then take out of oven
* Shred chicken
* In a bowl add chicken and tinned mixture then warm in microwave for 2 minutes.
* If you're adding more veg then this can all be cooked in a frying pan on stove top.
* Push down already baked puff pastry and add warm mixture to fill pie dish.
* Put last sheet of pastry over top of mixture and trim.
* Use leftover pastry to decorate, I like making balls.
* Cut slits near centre of pie to allow steam and mixture to come out (instead of it leaking out the sides lol).
* Bake in oven till pie top is golden brown - won't take long because mixture is already cooked.

Variations:
* Use leftover pastry to make cheesy bites. Just spray an oven dish with oil, make pastry into any shape and grate some cheese over them and bake. Do the sprinkling of cheese on a bread board first so the cheese is not all over the baking dish.
* You can use almost ANY leftover meat but this one is our favourite.

Heres my Banana Bread recipe.

Ingrediants:

120g unsalted butter

200g brown sugar

4 bananas mashed

2 eggs

1 1/2 cups plain flour

1 tspoon baking soda

1 tspoon salt

1 tspoon vanilla essence

Method:

Preheat oven 160 dehrees fanfoced(170 degrees normal oven)Grease a bread loaf tin

Place aoften butter and brown sugar in a bowl and beat until pale and fluffy.

Add mashed bananas and eggs and beat to combined.

Add sifted plain flour and baking soda

Add salt and vanilla essence and mix in with woiden spoon.

Pour mixture in tin.

Cook for about one hour until a skewer inserted comes out clean.

Mango and Banana Smoothie
2 Serves


Ingredients:
Half Fresh Mango or 1 cup of Frozen Mango Cubes
1 Banana
½ cup of Milk
If you don’t want to add milk you can add ½ cup of Orange Juice or Pineapple Juice for a tangy flavour.
1 tsp of Sugar
2 or more Ice Cubes

Equipment:
½ Cup
1 teaspoon
1 Blender
1 Chopping board
1 Knife
2 Serving Glasses

Method:
On your chopping board, peel your banana and mango.
Next, cut the mango and the banana into chunks.
In your blender jar, add the ½ cup of milk/juice, 1 tsp of sugar, ice cubes and the chopped banana and mango.
Next, blend until all the ingredients are combined and smooth.
Then Serve Into Your Serving Glasses! 🙂
