Hello BBers

Please share an easy recipe you love. If you have a story of where your recipe(s) came from, chat away. Feel free to write your recipe in any format you like! I can't wait to try Mara's specialty Rocky Road..... like yesterday.

Here's mine. A perfect 'day off' meal and absolutely wonderful for Winter. You can prep in the morning and put it together at lunchtime for dinner. I made up the recipe after a few dismal failures lol. I have ideas for any leftover cooked stock mixture later...

Beef brisket - the BB easy peasy way.
You'll need:
1 beef brisket that fits into your baking tray with some room.
1L beef stock. 2L if the brisket is BIG.
Worcestershire sauce.
2 onions sliced anyway you like.
Mushrooms sliced thickly - as many as you like.
Oil - any type.
Salt.
Pepper.
A baking tray... the best tasting one I've made was cooked in a cast iron, enameled baking tray but any will do.
Aluminium foil to cover the baking tray.
A frying pan / skillet.
Utensils for pan and tray.
Oven gloves.
Oven & stove top.

To cook:
Pour cold stock & 2 tblsp W sauce into baking tray.
Saute onions in oil in pan & add to baking tray.
Brown mushies as above & add to baking tray.
Sprinkle salt / pepper over brisket.
Brown both sides of brisket in pan then add to baking tray.
Cover whole tray with foil & scrunch under edges.
Spoon stock mixture over brisket to coat.
NB: The stock mixture needs to come up to around half way on side of brisket. Add more stock if needed.
Slow cook in warm oven c110C for about 2h.
Check.
Turn brisket.
Repeat.
Taste to see if more W sauce is needed.
Rest meat for 15 mins.
Slice and serve.

Note: IF you want a pulled beef effect then you can cook longer until beef is falling apart. Add to sliders, Turkish bread.

Thanks Neerja! It's really tasty and great in a thermos for lunch for school or work.

It's pretty healthy especially if you added more vegies.

This one is SO easy and it tastes SO gourmet lol, you won't believe it's so simple.
We are having this for dinner tonight with a potato recipe that's coming soon..

BB Honey Mustard Chicken
* Chicken breast fillets
* honey
* paprika (I like to use smoked paprika for this one)
* a sprinkle of turmeric
* mustard (I like seeded mustard but the kids prefer American mustard lol)
* baking paper & baking tray
* spray oil

Method
In a mixing bowl put around 1-2 tablespoons of honey per chicken fillet. Add mustard, paprika and turmeric then stir into a slurry. You can heat it for a few secs in the micro to make the honey runnier.
Place baking paper in baking tray - it needs to go up the sides so it can collect all the juices which makes a yummy 'gravy'.
Spray baking paper with oil.
Place chicken fillets APART, then spoon honey mixture along each one.

Bake in a moderate oven, turning and rotating chicken as you see the edges brown and crisp up.

To check if they're cooked, poke the middle of a chicken breast, if any pink comes out then put back in oven.
I've sliced the breasts after a while and laid them flat to cook faster.

Not so much of a recipe... in my teen years in the town I lived there was a thing called Hawaiian dogg which had

  • crisy onion or caramelized onions
  • small amount of chopped pineapple
  • cheese
  • "hot dog" sausage
  • bread roll

the important thing was the ordering ... dog in roll (obviously) then american/french mustard and tomato sauce, then pineapple, onion, cheese to keep it all together.

We love hot dogs but never thought about adding pineapple, so it's a thing lol.

Hello everyone...

I like all your recipes they sound yummy..

I find cooking for one person..myself..a very hard thing to do when I’m even feeling okay...When I’m down..it’s nearly impossible to cook...

My go too quick meal is very simple...

2 minute noodles.

1 cup of frozen mixed vegetable zapped in the microwave..

The noodles in the packet also microwaved until soft..

Boiling water..

Add it all together..mix the spice pkts into it and enjoy..

Not sure if it’s healthy, but I enjoy it..

This is one's a family favourite.

BB Spiced Roast Veg
You will need
* potatoes
* whole garlic cloves
* oil
* salt or chicken salt
* paprika
* turmeric
* any other powdered herbs / spices you like! Chinese 5 spices is great.

Method
Peel potatoes (I do this in the morning or night before and leave them whole in a pot of water).
Dry and cut potatoes in little wedges. Dry them off again.
Put oil in a baking tray and coat potatoes in oil.
Peel garlic cloves and coat with oil, leave in a little bowl.

Bake potatoes in oven.
In a mortar and pestle or just a bowl add all powdered herbs and spices and salt. Mix well.
When they begin to crisp up, take out, add garlic and sprinkle salt mixture all over them and turn.
Bake more.
Take out and sprinkle again.

When they're done EAT!

SO yummy! Yesterday I peeled 23 potatoes and 1 sweet potato (added with garlic) and everyone LOVED it.
Nothing left lol.

NB: You can add wedges of sweet potato and pumpkin, parsnip and turnips too (not beetroot unless you like all the veg going pink lol). ALL do really well in this recipe just know which veg are 'softer' and take less time to cook than potatoes and add them accordingly. Remember to coat them in oil before adding.

Nutella Milkshakes
2 Serves

Ingredients:
4 cups of vanilla ice-cream
1 cup of Milk (depends on how thick you want your milkshake to be)
8 tablespoons of Nutella
Optional: Add whipped cream on top of the milkshake. Also, you can add sprinkles and shredded chocolate on top of the whipped cream for an even better appearance.

Equipment:
Blender
2 Long Glasses
1 Spoon
1 cup
1 Tablespoon

Method:
Gather all your equipment and ingredients.
In your blender, add one cup of milk, eight tablespoons of Nutella and 4 cups of ice cream.
Then blend them all together until all the ingredients are smooth and combined.
Don’t blend the milkshake too much, because it wouldn’t be very thick.
Then serve the milkshake into your glasses and decorate with whipped cream and sprinkles or shredded chocolate.
