Hello BBers

Please share an easy recipe you love. If you have a story of where your recipe(s) came from, chat away. Feel free to write your recipe in any format you like! I can't wait to try Mara's specialty Rocky Road..... like yesterday.

Here's mine. A perfect 'day off' meal and absolutely wonderful for Winter. You can prep in the morning and put it together at lunchtime for dinner. I made up the recipe after a few dismal failures lol. I have ideas for any leftover cooked stock mixture later...

Beef brisket - the BB easy peasy way.
You'll need:
1 beef brisket that fits into your baking tray with some room.
1L beef stock. 2L if the brisket is BIG.
Worcestershire sauce.
2 onions sliced anyway you like.
Mushrooms sliced thickly - as many as you like.
Oil - any type.
Salt.
Pepper.
A baking tray... the best tasting one I've made was cooked in a cast iron, enameled baking tray but any will do.
Aluminium foil to cover the baking tray.
A frying pan / skillet.
Utensils for pan and tray.
Oven gloves.
Oven & stove top.

To cook:
Pour cold stock & 2 tblsp W sauce into baking tray.
Saute onions in oil in pan & add to baking tray.
Brown mushies as above & add to baking tray.
Sprinkle salt / pepper over brisket.
Brown both sides of brisket in pan then add to baking tray.
Cover whole tray with foil & scrunch under edges.
Spoon stock mixture over brisket to coat.
NB: The stock mixture needs to come up to around half way on side of brisket. Add more stock if needed.
Slow cook in warm oven c110C for about 2h.
Check.
Turn brisket.
Repeat.
Taste to see if more W sauce is needed.
Rest meat for 15 mins.
Slice and serve.

Note: IF you want a pulled beef effect then you can cook longer until beef is falling apart. Add to sliders, Turkish bread.

You are right, it is more like a thick shake.

Its really hard to wash the blender though, lol.

Today I made lemonade from my bush lemons. This recipe makes about a litre.

Ingrediants:

2 cups water

2 cups sugar

2 cups lemon juice.

Method:

Juice lemons to make 2 cups of juice.( Was 8 bush lemons for me.)

Simmer the water and suger in saucepan strutting until the sugar is desolved.Remove from heat.

Add lemon juice stirring in.

Put in bottle and pour in glass with ice. You can add more water if to strong for you.

Basil and tuna pasta (GF; check tuna, pesto and noodle ingredients)

Ingredients

  • Homebrand pesto (1/4 jar per person)
  • Bean thread noodles (1 clump per person)
  • Tuna chunks in brine (1/2 tub per person)
  • Frozen beans (or peas) (not sure of amount per person)

Steps:

  1. Boil water on stove.
  2. Put bean thread vermicelli into the water (can turn off stove at this point if you like as the noodles will soften even if the water isn't actively boiling).
  3. Microwave beans at the same time, for about 4 minutes or until fully defrosted and hot.
  4. Once noodles are soft, drain noodles and put drained noodles back into pot.
  5. Stir in pesto, cooked beans and tuna chunks.
  6. (Optional) If heat of noodles and beans hasn't made the tuna and pesto warm enough, turn the stove back on and stir the whole lot for a minute or so until heated evenly.

I LOVE lemon cordial and it's so much yummier made this way.

It's PERFECT for Winter time warmed up with honey to keep our Vitamin C levels up.
We really need it THIS year for certain!

Hi BB Peeps! It's been a while.
I made this super cheap recipe last weekend with leftover sausages lol... not a great fan of sausages but this recipe was awesome and great heated up the next day too.

Ingredients:
Sausages - cooked and diced
Carrot - diced
Zucchini - diced
Rice - cooked day before, I used Basmati for it's separation quality
Fish sauce
Oil
BBQ sauce - I used smokey hickory
Paprika
Salt.

Method:
Pour a little oil in fry pan and cook carrots. When they look soft add zucchini and fry till brown bits happen on edges of veg.
Separate the cooked basmati rice with your hands and put into frying pan. Add all other ingredients, tasting along the way for how much sauce to add.
If you add too much sauce (as I did lol) add more rice to even it out.

Variations:
* add diced onions when frying carrots.
* use tomato sauce instead of BBQ.

Enjoy!
This was a great lunch for work the next day and everyone wondered what the great smell was!

Hello EM,

A really simple yummy Satay Sauce recipe:

Ingredients:

  • 20g butter
  • 1 medium leek - diced ( can use onion but I prefer leek)
  • 1/2 teaspoon chilli powder
  • 3 tablespoons sugar
  • 4 tablespoons peanut butter
  • 60 ml white vinegar
  • 2 teaspoon soy sauce
  • 250ml water

Method:

  1. Heat butter in pan
  2. add leeks & gently fry until tender
  3. add remaining ingredients - mix well
  4. simmer for 10-12 minutes or until thick

WOW what an awesome recipe! I love satay anything but I'm not supposed to eat some things like onions... ughh so leeks are a great replacement!
Never thought of that lol.

SUPER EASY SPANISH GARLIC PRAWNS (Blubes Style)

Serves 2 - as part of tappas or light dinner for one.

Pre-heat oven to 180 degrees

Ingredients:

0.250 Kg of large prawns (with tail on)

2 large garlic cloves - minced

I large red chilli - deseeded & chopped

Parsley (garnish) - chopped

100g butter (salted or unsalted, up to you)

2 tbls olive oil

1 tsp smoked paprika

Pinch of salt

Lemon wedge (optional)

Instructions:

In a small pot, add garlic, chilli, butter & oil on low heat until butter's melted. Add paprika & salt.

Place prawns in a small oven-baked dish (ramekin) and pour over the mixture.

Place foil on top of ramekin & in pre-heated oven for 10-12min.

Serve in bowl, sprinkle parsley on top and serve with crusty bread and side salad as entree.
