Hello BBers

Please share an easy recipe you love. If you have a story of where your recipe(s) came from, chat away. Feel free to write your recipe in any format you like! I can't wait to try Mara's specialty Rocky Road..... like yesterday.

Here's mine. A perfect 'day off' meal and absolutely wonderful for Winter. You can prep in the morning and put it together at lunchtime for dinner. I made up the recipe after a few dismal failures lol. I have ideas for any leftover cooked stock mixture later...

Beef brisket - the BB easy peasy way.
You'll need:
1 beef brisket that fits into your baking tray with some room.
1L beef stock. 2L if the brisket is BIG.
Worcestershire sauce.
2 onions sliced anyway you like.
Mushrooms sliced thickly - as many as you like.
Oil - any type.
Salt.
Pepper.
A baking tray... the best tasting one I've made was cooked in a cast iron, enameled baking tray but any will do.
Aluminium foil to cover the baking tray.
A frying pan / skillet.
Utensils for pan and tray.
Oven gloves.
Oven & stove top.

To cook:
Pour cold stock & 2 tblsp W sauce into baking tray.
Saute onions in oil in pan & add to baking tray.
Brown mushies as above & add to baking tray.
Sprinkle salt / pepper over brisket.
Brown both sides of brisket in pan then add to baking tray.
Cover whole tray with foil & scrunch under edges.
Spoon stock mixture over brisket to coat.
NB: The stock mixture needs to come up to around half way on side of brisket. Add more stock if needed.
Slow cook in warm oven c110C for about 2h.
Check.
Turn brisket.
Repeat.
Taste to see if more W sauce is needed.
Rest meat for 15 mins.
Slice and serve.

Note: IF you want a pulled beef effect then you can cook longer until beef is falling apart. Add to sliders, Turkish bread.

Always a bonus to like something the kids didn't eat lol.

Pumpkin salad
Ingredients:
Diced peeled pumpkin
Whole garlic cloves
Pine nuts
Mixed leafy greens - I like baby spinach and rocket.
Balsamic vinegar
Oil
Balsamic vinegar

Method:
Lightly roast pine nuts and remove from oven.
Bake pumpkin pieces in LOTS of oil till browned on all edges. The oil helps make the dressing.
Add garlic cloves during baking pumpkin until they are really soft (they may need less baking time).

Remove pumpkin and garlic from baking dish, retaining oil is dish.
Pour balsamic vinegar in baking dish whilst hot and mix well including all the crusty vege bits.

I set out this meal in separate dishes so people can add as much or as little of each as they want as follows...
1. Mixed greens
2. Hot veg
3. Pine nuts
4. Dressing in a jug.

Variations: my friend adds sugar to the dressing...
I've used sweet potato instead of pumpkin and it's just as yummy.
Veg can be done earlier in the day and zapped in the microwave to serve.

That's really good Mark! Do you add other things to the recipe?

I have been making them a lot too because the Nutella in my house, had an expiring date that was very near, haha.

Hi Neerja I also add honey to it.I add honey to a lot of things as it is very good for you and taste great.

Thanks, Mark! I will definitely try adding honey the next time I make Nutella milkshakes. Honey is a good substitute for sugar, the amount of fructose makes honey sweeter than table sugar and you use less amount of it.

Hi all. I have an easy go-to when I need a nutritious and filling meal but don't have much energy for cooking. It's an all-purpose Mexican topping I use for nachos, tacos or quesadillas. It's really forgiving, you can get away with just throwing it all in the pot in no particular order if you're too tired to care. Quantities are also forgiving, depending on what you have around the place, but ideally you want a lot of beans in there, less tomato or mince is okay.

Ingredients:

2x packets Quorn mince (about 700g - if you are a meat eater unlike me, substitute for regular mince)

2x tinned diced tomatoes (fresh also works, but you'll need to add some passata for more depth of tomato flavour)

1x tin of 4 bean mix

1x tin of refried beans (you can use 2 tins of 4 bean if you like, but this gives the mix a more hearty texture)

1 cup frozen corn (optional, but tasty)

Mexican chilli to taste

Salsa and sour cream (and/or guacamole) to serve.

For nachos: corn chips, cheese.

For tacos: tortillas, fresh tomato and lettuce.

For quesadillas: tortillas, cheese.

Method:

Fry the Quorn mince from frozen, until it's thawed. Add spices and toast them a little, then add everything else. If the mix seems a little dry, add water until you're happy with the texture - it should look a little sloppy at first, the liquid will reduce as it cooks. Bring to the boil then drop to a quiet simmer and cook until beans are soft (about 10-15 minutest but honestly, if there's enough liquid, you could forget about it for half an hour and it would be fine).

For nachos: melt cheese over corn chips either in the oven on low heat or zap for 30 secs in the microwave if you can't be bothered. Add topping, salsa and sour cream.

For tacos: warm a tortilla for about 10-20 secs in the microwave. Add sour cream, Mexican topping, salsa, some fresh tomato and lettuce.

For quesadillas: add a little butter to a small frypan on low heat. Add tortilla and a layer of cheese right up to the edges. Put a little of the topping on one side of the tortilla only and cook until the cheese is melting. Fold tortilla over, the cheese will hold the parcel together. Serve with salsa and sour cream.

This was one of the first things I learned to make meat-free when I went vegetarian, and has been a staple ever since.

I made similar things when my vegan children lived here. We were mostly vegetarian at the time, so I ALWAYS kept cans of refried beans in the cupboard.

Refried beans make a FANTASTIC Mexican dip too!

I must post my fiancee's Mexican cheese dip... omg it's SO delicious! I'll get him to tell me it again lol. (And his mom's enchilada recipe too... mouth watering).

He grew up in San Diego right near the border of Mexico and WOW does he know how to cook Mexican food!

I even tried doing as he said, making authentic deep fried tacos with pulled beef... such an indulgence but NOT a time saver lol... even after we finished cooking we had to clean the greasy floor many times to get the oil off of it!
He does it 'cleaner' than we do, so we're leaving it to HIM to show us how it's done from now on lol.

I think we do Mexican with much less fat here thank goodness.

You're welcome, EM. Cheese dip sounds pretty good - I'll pass on the pulled beef though. Not a fan of meat, fat, or mess!

2 ingredient recipe: jam + toast = jam on toast

3 ingredient recipe: toast + margarine (or butter) + jam = posh jam on toast

4 ingredient recipe: toast + margarine (or butter) + jam + peanut butter = a delicious mess.

This is intended as a joke, so regard me. sometimes laughter is the best medicine, even if is a sigh with an eye roll.
