Hello BBers

Please share an easy recipe you love. If you have a story of where your recipe(s) came from, chat away. Feel free to write your recipe in any format you like! I can't wait to try Mara's specialty Rocky Road..... like yesterday.

Here's mine. A perfect 'day off' meal and absolutely wonderful for Winter. You can prep in the morning and put it together at lunchtime for dinner. I made up the recipe after a few dismal failures lol. I have ideas for any leftover cooked stock mixture later...

Beef brisket - the BB easy peasy way.
You'll need:
1 beef brisket that fits into your baking tray with some room.
1L beef stock. 2L if the brisket is BIG.
Worcestershire sauce.
2 onions sliced anyway you like.
Mushrooms sliced thickly - as many as you like.
Oil - any type.
Salt.
Pepper.
A baking tray... the best tasting one I've made was cooked in a cast iron, enameled baking tray but any will do.
Aluminium foil to cover the baking tray.
A frying pan / skillet.
Utensils for pan and tray.
Oven gloves.
Oven & stove top.

To cook:
Pour cold stock & 2 tblsp W sauce into baking tray.
Saute onions in oil in pan & add to baking tray.
Brown mushies as above & add to baking tray.
Sprinkle salt / pepper over brisket.
Brown both sides of brisket in pan then add to baking tray.
Cover whole tray with foil & scrunch under edges.
Spoon stock mixture over brisket to coat.
NB: The stock mixture needs to come up to around half way on side of brisket. Add more stock if needed.
Slow cook in warm oven c110C for about 2h.
Check.
Turn brisket.
Repeat.
Taste to see if more W sauce is needed.
Rest meat for 15 mins.
Slice and serve.

Note: IF you want a pulled beef effect then you can cook longer until beef is falling apart. Add to sliders, Turkish bread.

That's kinda what I wanted to do when someone asked for EASIER recipes lol!!
I admit I do get carried away in the kitchen sometimes.

I like the recipes too! They're pretty awesome lol.

You're a peep after my own heart lol.

My very serious question to you about your post is.... how do you make toast?

you got me...i guess making the toast is more than 1 ingredient if were talking raw materials.

as far as toasting it - rare, medium, or well done - i like medium in the toaster. Rare hasnt got enough crunch, and Well done makes the smoke alarm go off.

Lol, I went REALLY fancy for lunch today lol...

Roast chicken and Gravy roll
Roast chicken
Gravy powder - today I used 2 gravy powders; one regular gravy mix and the other Pepper sauce mix.

Method
In a small, microwave proof mixing bowl, put gravy powders and some cold water.
Stir very well, I used a whisk.
Put gravy mix in microwave for 20 - 40 secs at a time, removing to whisk gravy each time.
Add more water if necessary.

Cut roll in half and add roast chicken.
Pour gravy over chicken.

EAT!

I finally remembered to ask my fiancee for his mother's favourite cheese dip recipe!

I'll give you the basic recipe and you can choose what you add...

Cheese dip
Ingredients

1 block of Kraft cheese - diced
1/2 cup milk
Corn chips for dipping.

Method
Place diced cheese in a pot on the stove on low heat.
Stir and add milk slowly. Aim for a runny consistency as the dip will thicken after cooling.
When all cheese is melted, serve.

Variations:
Being from San Diego my fiancee adds 2 tblspns of chopped jalapenos.
He also likes to add diced tinned tomatoes (drained).

I prefer to make this in the microwave in a mixing bowl (easier to clean! lol) and I spritz in for 10-20 secs per go and stir in between.
My kids just like the plain recipe.

pasta, peas, potato and cheese

well... the sauce does also have onion and wine. so...

soften the onion in pan, add cooked potato and and peas.

add wine (1 cup for 4 persons) and cook til reduced by 1/2.

once pasta mostly cooked.... add some water other mixture to create the sauce and add some cheese here.

want it to be silky to sticks to pasta (sort of).

put onto plate and add more grated cheese.

my fiancee will LOVE this recipe! He has a long time to practice it before he makes it for me lol.

the cheese for me is parmesan and the wine is whatever I find in the fridge - it is really just there to elevate the taste.

there is a similar recipe that has beans and pesto and potato.

I was just looking for something light to eat tonight.

Do you have to have mashed potato? or is does diced potato work better?

I was also watching a video on YouTube before and it was a simple dish of spaghetti and tomato sauce and it was by a 2 star chef. I will skip over the 4 different types of tomatoes used (incl. tomato juice/water) but...

oil in pan.

add clove of garlic - do not peek or anything, you just want the flavour.

add tomatoes and fry on low heat til soft.

cook spaghetti (pre-made stuff) for 3 minutes in water - just so they bend a bit). And the transfer the spaghetti into the tomato sauce to cook for the remaining time. The starch from the pasta helps in creating the sauce.

if it starts to get too dry add a little of the pasta water.

somewhere near the end salt was added also.

nearly forgot... he also added basil into the tomato sauce near the beginning for flavour also.

Here we go again lol...

Magnificent Mushrooms
Sliced mushrooms
Butter
Fresh oregano

You'll need a frying pan and utensil to turn mushrooms.

Method
Melt butter on low heat.
Add sliced mushies, turn up the heat slowly until they begin to get a crispy edge to them.
Add fresh oregano until crispy.

Serve!
This goes magnificently with poached eggs on toast.

Variation
Add to cooked spaghetti for a nice twist. Nothing else needed except maybe more of the mix!
