Recently, I’ve been experiencing some weird symptoms, just feeling a bit off overall. Nausea here and there, a general sense of anxiety that I can’t really explain. It made me start paying more attention to what I’ve been eating and whether that might be playing a role. I ended up down a bit of a rabbit hole reading about how our gut might actually influence our mood and mental health. Has anyone else noticed changes in their mental or emotional state based on their diet? And when it comes to therapy or professional support, is gut health something that actually gets talked about? Or is it one of those things that flies under the radar in mental health discussions?

Your intuition is correct, there is definitely a connection.
In the past and until recently, doctors paid no attention to diet in health disorders and receive no dietary information as part of studying to be a doctor (which is unbelievable in my opinion). More recently, however, the studies and science is showing a direct connection with everything. Our diet affects how healthy our microbiome is, which has a huge role in producing hormones and neurotransmitters that keep the mind and body running as it should.
Many doctors are seeing and accepting this whole health approach, which was the foundation of medicine prior to Western medicine's narrow view. Everything we do or don't do, eat or don't eat, even they way we think, effects everything else, emotionally, psychologically, physically and spiritually.
So for the moment, it will depend who you speak to as to whether or not diet is a consideration, but there are some out there, it's a matter of finding them. Perhaps that should be your first question "are you a doctor who considers all areas of health, or do you compartmentalise health".
You will find Naturopaths have always had a whole health approach, same with Traditional Chinese Medicine, Ayurveda and most other practises that have been termed as 'Alternative Medicine' in Western society. Yet these are the ones that should be front and centre, with Western medicine working long side for cases that are more difficult to treat. Our bodies are inundated with chemicals, pollutants, preservatives etc. that we are not equipped to deal with, so it is no surprise that so many are in a bad state of health.

Welcome to the forums and thank you for sharing your story about gut-brain relationship which is such an important and interesting topic.
Research has shown a connection between microbiome gut health and mental health such as anxiety, depression etc. The gut-brain connection not only helps digestion but also mood, stress response and cognitive functions. That is the reason many people experience stomach pain or nausea when they are stressed or anxious. More nerve cells reside in the gut and brain, hence they have this close relationship.
It's always good to eat a well-balanced nutritious, probiotics meal which improves mental well-being. Supporting a healthy gut-brain connection with dietary changes or stress management can improve and support a more vibrant mind and body.
