What Are You Eating Now - Simple, Healthy Meals

OK, so this is a thread for simple to cook, economical, healthy recipes. Simple meaning minimal cooking/prep. I’m single, so my meals generally feed 1, so please multiply ingredients by number of people you want to feed lol. I’m also a fan of minimal washing up!
#1. Pasta, Pesto, Steamed Veg and Pecorino/Parmesan. - Preparation - Minimal. Cooking time - maybe 20mins 🙂
Ingredients
Jar of Pesto Sauce (I use the Coles brand @ $1.95) - 1 jar will make 4 single serves.
Uncooked Pasta of your choice - pasta is always on special somewhere,
Birdseye Steamed Veg Portions (Usually $3:40) - 3 serves to the bag.
Grated Pecorino/Parmesan - I forget what a bag costs, but it lasts for quite a while. I prefer Pecorino, it’s saltier than Parmesan.
Method.
Put water on to boil for pasta. Once boiling, put pasta in and cook until at your required level of “cooked”. Personally, I’m not fussed about overdone 🙂
Steam a bag of veg for 3 minutes - if you’re cooking for more than 1, then 2 bags probably make a great serve for 3 people - depending upon pasta quantity. Adjust cooking time accordingly.
Drain pasta, return to saucepan and stir pesto through. Allocate approx 1.5 teaspoons per serve.
Cut open steam veg and drain excess water from pouch. Throw in with pasta and stir/toss.
Serve, add Pecorino/Parmesan, salt pepper etc to taste.
Eat and enjoy!
Please add your own recipes to the thread. Eating, tasty, inexpensive and easy to put together food is one of the hardest parts about looking after yourself if you’re single. It’s also cheaper and healthier than buying takeaway.

But since you're starting a new one I'll flip through my recipe book and add to the thread 🙂
1# Vegetarian
Omelettes, Vegetable patties (we use a chickpea one which is so cheap because chickpeas are $1), nachos (either with baked zucchini slices or corn chips and you can add salsa and your choice of veggies), enchiladas (wraps with beans, salsa, vegies rolled up and baked with a bit of cheese on top), baked eggs (chilli beans, canned tomatoes in the frypan and crack an egg on top), spinach and pumpkin penne or pasta in general.
#2 Meat
Pie (using mashed potato or similar and mince), schnitzel with salad (you can get a decent size one at coles for $2), meatloaf, baked sausages with potatoes and veg, tomato baked chicken - a lot of cheap meals are one pan or baked.
Hints:
- Get the catalogues and look at what's on special
- Meal prep. Yes it's annoying but you will save money. It's the best thing that I've done for my budget. I also shop online which helps save time and helps me avoid all the temptations everywhere.
- Shop around. A bag of 500g frozen veg can be used in the microwave or added to meals to bulk it up and make leftovers.
- Look for recipes that work for you. No point planning something crazy if you don't have the time, energy or resources. http://www.healthyfoodguide.com.au/recipe-collections/low-cost is a great one for cheap but healthy meals.

Mathy. I like quick simple recipes, Cant wait to try yours!
Pecan carrot rissoles::
5 ingredients..yield about
9x 4cm rissoles. Serves 3.
Ingred:
1 pkt instant mashed potato
1/2 cup boiled water
1 egg beaten
1/2 cup carrot grated
1/2 cup pecan nuts chopped
1. Tip whole pkt potato into large bowl.
2. Pour boiled water over potato
3. Mix together til firm.
4. Add beaten egg
Mix with fork
Add::
carrot
pecan nuts
Mix together
Add pepper to taste
Press rissoles to about 1cm thick
Fry in oil til golden approx 4 mins each side..
For more flavour add 1/2 tspn curry powder. If mix a bit dry add 2 Tablespoon tomato sauce.
Serve with steamed microwave veg or salad.

Oh meercat and hi all,
Those rissoles sound pretty good, I am just wondering if I could use like all mashed potato instead of the packet mashed one? Have you tried that way at all?

Yes Shell, good idea! fresh mashed potato is fine as long as mixture is not too wet. If you are a salmon or tuna eater, just substitute pecan nuts for a large tin fish boned and drained. Thanks for chatting. meercat xx
